Updated README.md to reflect active community maintainers

With the absence of Choffee and Iutye, I've removed them and replaced them with myself as I (and very, very rarely ProfessorDey / some other community members)) maintain the Flatpak builds now.
Additionally, I swapped over my URL from GitHub to Keybase to better point towards places to find me.
